50 ml coconut milk
125 g plain yoghurt
75 g caster sugar

1Mash the pineapple into a purée
If you prefer smooth ice creams, you can then sieve the purée to remove all the fibres.
- 400 g frozen pineapple
2 Stir the purée into the cream, combining the mixture well.
- 400 g frozen pineapple
- 50 ml coconut milk
- 125 g plain yoghurt
- 75 g caster sugar
3Add the vanilla essence and check to make sure that the mixture is sweet enough.
4Freeze-churn for 20‑30 minutes in Le Glacier / Gelato Expert.
