250 ml double cream

250 ml milk

4 egg yolks

1 vanilla pod

600 g mincemeat

RECIPE STEPS
1In a saucepan, whisk together the milk, cream and split vanilla pod and to bring to the boil.
2Once the mixture comes up to the boil, remove from the heat.
3In a separate bowl, whisk the egg yolks and sugar together until pale, pour on the milk and cream, whisking continuously until the mixture is fully combined.
4Return the mixture to a clean pan and gently heat whilst continuing to stir.
5Cook until the mix coats the back of a spoon before straining into a bowl set over ice.
6Cool the mix, then churn in the Gelato Expert until an ice cream consistency is reached.
7Finally fold in the mincemeat into the ice cream and serve.
