1 pinch of salt

200 ml of espresso

500 g of mascarpone

300 g of speculoos

60 g of sugar

3 tbsp of amaretto (optional)

RECIPE STEPS
1In the clean metal bowl, install the beater.
2Crack the eggs, separating the whites from the yolks. Place the whites in the metal bowl with a pinch of salt and run the program, removing the cap from the opening.

3Remove the mixer and set aside the egg whites. Place the yolks in the metal bowl, add the sugar and run the program.

4Whiten the mixture then add the mascarpone and restart the program.

5Gently fold the egg whites into the mascarpone cream using the spatula.

6Reserve 1/4 of the speculoos. Lightly soak the rest of the speculoos in cold coffee and possibly alcohol.

7Line the bottom of the dish with soaked speculoos. Fill with cream, cover with soaked speculoos then add another layer of cream and place the dish in the refrigerator for a night.

8Install the transparent bowl and mix the remaining quarter of speculoos in the mini bowl by running the program.
