470 g whole milk

50 g double cream

100 g sugar

60 g milk powder

50 g honey

140 g avocado

0.5 tsp salt

RECIPE STEPS
1Add the skimmed milk powder, sugar, milk & cream into a saucepan. Heat on medium-high until simmering, stirring occasionally. Remove from the heat and cool the pan in a cold-water bath.
  • 470 g whole milk
  • 50 g double cream
  • 100 g sugar
  • 60 g milk powder
2Whilst cooling, add the avocado flesh, honey & salt into a high-speed blender.
  • 50 g honey
  • 140 g avocado
  • 0.5 tsp salt
3Once the milk mixture has cooled slightly, add into the blender and blend for approximately 30 seconds on maximum speed until smooth.
4For best results chill the mixture in a sealed container in the fridge or freezer until it reaches 10°C or below (3-4hrs in the fridge, 1-2hrs in the freezer). The mixture can also be placed in the fridge overnight if needed.
5Turn on the Gelato Expert to pre-cool for 5-10mins. Strain the mixture through a sieve and pour into the Gelato Expert on the gelato setting. The machine indicator light will flash slowly once the desired consistency is reached.
