RECIPE STEPS
1On a piece of flexible cardboard, draw a quarter circle with a radius of 12 cm. You need to get a triangle with a rounded base. Cut out the triangle and roll it into a cone. Secure the cone with tape and fill it with baking beads or dry beans. Tape the top and wrap it in aluminum foil.
2Preheat the oven to 210 °C.
3In the metal bowl, install the whisk, pour in the egg whites and remove the cap. Run the program. Set aside.

4Pour the sugar, the soft butter cut into cubes and the vanilla then run the program. Fold the mixture if necessary.

6Line baking sheets with parchment paper. Draw 13 cm diameter circles on the parchment paper sheets and flip them over (the circles can be seen through the paper, but the ink is not in contact with the dough). Spread 1 to 1.5 tablespoons of dough in each circle, very thinly, using a spatula. Bake the first sheet and let it cook for 4 to 5 minutes, until the dough discs are nicely golden.
7Shape them quickly while the dough is still hot: place the mold on a pancake and fold it using a spatula. Repeat the process with the rest of the dough. Do not cook more than three discs at a time, otherwise they may harden before being shaped.
