1 kg pork shank
2 tbsp of plain flour
400 ml of white wine
600 g of chopped tomatoes
1 pinch of salt
1 pinch of pepper
150 g of green olives
2 tbsp of fresh flat-leaf parsley

RECIPE STEPS
1Peel and finely slice the carrots as well as the onions.
Peel and chop the garlic.

2Preheat the cocotte on high heat on a stove with a drizzle of olive oil, without the lid.
- 8 tbsp of olive oil
3As soon as the cocotte is hot, place the shank in it and brown it for 15 minutes on all sides using a wooden spoon.
Set aside.
- 1 kg pork shank
4Remove the cocotte from the stove and place it on its pre-installed stand on the Cook Expert.
Add the onions, carrots and garlic, mix, cover the cocotte then run the program.

5Add the flour, white wine, and chopped tomatoes, salt, pepper.
Gently place the shank and run the program.
- 400 ml of white wine
- 600 g of chopped tomatoes
- 1 pinch of salt
- 1 pinch of pepper
- 1 kg pork shank
- 2 tbsp of plain flour

6Add the olives and restart the program.
- 150 g of green olives

Simmering |
20:00 / / 110°C
7Adjust the seasoning if necessary.
Sprinkle with flat parsley then serve immediately.

so simple, can use any meat, chickpeas or Lentils. used stock instead of white wine and black olives instead of green. the recipe can have endless variations …..delicious
