125 g plain flour

5 g baking powder

30 ml milk

65 g melted butter

95 g sugar

2 eggs

1.5 tsp orange extract

1 pinch salt

Chef's tip

It is important to let the madeleines rest in a cool place before placing them in the oven. This will create the thermal shock necessary for the formation of the bump of the madeleine.

RECIPE STEPS
1Add all the ingredients into the bowl fitted with the dough hook. Switch on the machine and run for 30 seconds.
  • 125 g plain flour
  • 5 g baking powder
  • 30 ml milk
  • 65 g melted butter
  • 95 g sugar
  • 2 eggs
  • 1.5 tsp orange extract
  • 1 pinch salt
2Butter and flour the madeleine moulds and fill each section with the batter to about 2/3 full. Place in the fridge for 30 minutes.
3Preheat the oven to 200°C. Once the resting time has finished, bake the madeleines for 10 minutes. Transfer the madeleines onto a wire rack to cool.

Brilliant, simple and quick. I used SR flour and tested the mixture for the stated 30 minutes. it made 18 perfect Madeleines.
