1 handful peanuts, soaked in hot water for 1 hour, drained

3 fresh long red chilli, chopped

7 dried long red chillies, deseeded, soaked and drained

3 red shallots, chopped

22 g of ground ginger

1 knob of ginger

3 lime leaves, finely sliced

15 g of lemongrass

14 garlic cloves

1 handful of coriander roots, scraped and chopped

30 ml Extra virgin olive oil

2 pinches salt

200 g beef brisket, sinew removed

400 ml coconut milk

400 ml coconut cream

100 ml stock

1.5 tbsp palm sugar

2 tbsp fish sauce

1 handful of coriander, finely chopped

1 handful of Thai basil leaves, finely chopped

RECIPE STEPS
1soak the peanuts in hot water for 1 hour, then drain

2 Deseed, soak and drain the dried long red chillies. Set aside
  • 7 dried long red chillies, deseeded, soaked and drained
3Separately chop the long red chilli, red shallots, lemongrass and coriander and basil. Finely slice the lime leaves Set aside
  • 3 fresh long red chilli, chopped

  • 1 handful of coriander, finely chopped
  • 1 handful of Thai basil leaves, finely chopped
  • 15 g of lemongrass
  • 1 handful of coriander roots, scraped and chopped
4 Deseed, soak and drain the dried long red chillies. Set aside
  • 7 dried long red chillies, deseeded, soaked and drained
5To bring the paste together, place all paste ingredients in the metallic bowl. Select EXPERT mode, set the speed at level 18 and the time will set for 3 minutes.

6Once it turns into a purée, Select the EXPERT mode, set for 5 minutes, set the speed at level 3 and cook at 120°C.

7Add the fish sauce, coconut milk, coconut cream, sugar, stock and beef. Select the EXPERT mode, set for , set the speed at level 1A and cook at 110°C.

8Stir in the fresh herbs and serve.

Luvly dish… only needed over an hour longer to cook so that the meat was tender. flavours were good
