100 ml white wine

1 tbsp plain flour

1 tbsp curry powder

1 pinch salt

1 pinch pepper

100 g of mimolette

50 g butter

1 L hot water

5 large onions

1 chicken stock cube

1 tbsp cane sugar

4 slices slightly stale farmhouse bread

1.5 tbsp olive oil

1 tbsp fresh coriander

150 g of grated Emmental cheese

1 pinch salt

1 pinch pepper

You can replace the curry powder with ground turmeric, or add it to the recipe as an extra.

RECIPE STEPS
1Peel and quarter the onions. Put them in the metal bowl and run the program.

2If necessary, scrape down the wall of the bowl. Gradually add the butter and run the program.

4Serve the soup in bowls, scatter the croutons over the surface and sprinkle with grated cheese.

  • 150 g of grated Emmental cheese
5Place the bowls under the grill for 5 minutes at 240°, or until the cheese has browned.
6Cut the bread into cubes. Wash and chop the coriander. Put the bread cubes onto an ovenproof dish and pour over the ingredients.

  • 1 tbsp fresh coriander
  • 1 pinch salt
  • 1 pinch pepper
  • 4 slices slightly stale farmhouse bread
7Cook for 10 minutes at 180°C (grill mode) and checking regularly.
8Separate the croutons from one and other.
