
Courgette, charred corn & tomatoes

1 sweet onion
300 g of multicoloured cherry tomatoes
3 tbsp extra virgin olive oil
125 g of sweetcorn
2 courgettes
1 bunch of basil
1 pinch of sea salt
1 pinch of freshly ground black pepper

RECIPE STEPS
1In a bowl combine the halved tomatoes, onion and olive oil; season.
- 1 sweet onion
- 300 g of multicoloured cherry tomatoes
- 3 tbsp extra virgin olive oil
2Char the corn over a gas flame or under a hot grill for about 10-15 minutes.
When cool enough to handle remove the kernels and add to the bowl with the tomato mixture.
- 125 g of sweetcorn
3Spiralize the courgettes using the SPAGHETTI cone. Cut into shorter lengths.
- 2 courgettes
4Fold the courgette spaghetti and basil leaves into the corn mixture.
- 1 bunch of basil
- 1 pinch of sea salt
- 1 pinch of freshly ground black pepper
