600 ml double cream

100 ml cold water

1 pinch of salt

RECIPE STEPS
1Attach the large Sabatier blade to the large bowl of the Food Processor.
2Pour in the cream and press AUTO.
  • 600 ml double cream
3 Stop the machine when you can see the buttermilk start to separate from the butter. This takes between 60 – 90 seconds.
4Pour out the buttermilk by pressing the butter against the sides of the bowl. Add the water to wash the butter.
  • 100 ml cold water
5Run the processor for an additional 30 seconds.
6Discard the water and add the salt. Press PULSE a few times until it is fully incorporated.
  • 1 pinch of salt
7Take the butter out and use spatulas to shape the butter into a rectangular block. Place in the fridge to firm up.

First attempt and very impressed but my personal preference would be to add slightly more than a pinch of salt next time.

times took me longer but maybe the difference in the input material.

I followed the recipe as described and it went fine until it says to add water and run for additional 30 sec. The magimix basically has emulsionated the new water in the butter and created a cream. A very good looking cream but NOT butter! please avoid adding water after you have removed the buttermilk. just place the butter in ice cold water, wash it, make the shape of butter and you are done.
