1 brown onion

3 Garlic Clove

2 tsp grated ginger

3 tbsp olive oil

1.2 kg chuck steak

1 tbsp salt

2 tsp pepper

4 tsp korma curry paste

400 ml coconut milk

1 sweet potato

1 handful cshew nuts

1 tbsp coriander

100 g rice

RECIPE STEPS
1Heat oil for I min on Saute program. Season beef with salt & pepper. Brown beef in batches.
  • 3 tbsp olive oil
  • 1.2 kg chuck steak
  • 1 tbsp salt
  • 2 tsp pepper

2Place onion, garlic & ginger in the Cocotte. Saute for 5min.

3Add korma paste & saute for 2min until fragrant, then add coconut milk & bring to the boil.

4Add beef, stir & place on lid. Place on Simmering program, 110 degrees, for 3 hours.

5Add diced sweet potato and cook for a further hour. Simmer with the lid off for the last 30minutes if sauce needs thickening. Beef is ready when tender & falling apart.

6Serve with steamed rice, garnished with coriander & cashews.
