1 tbsp dijon mustard
5 tbsp mayonnaise
1 tbsp cider or sherry vinegar
1 pinch salt
1 pinch pepper
50 g cranberries
50 g walnuts
300 g carrot
400 g red cabbage
400 g white cabbage
1 tsp caster sugar

For a more traditional version, omit the cranberries. Or, you could replace the cranberries with raisins

cabbage and carrot proportions are not right, it’s more like 16 portions
