Celery purée

Serves 6 :
3 ¼ lb celery
3 tbsp olive oil
3/4 cup Crème fraîche
or heavy whipping cream
salt
1Peel and wash the celery. Slice it using the 4-mm slicing disc.
2Pour a Quart of water into a saucepan or into your steamer.
3Add the celery, cover with a lid and cook.
4The celery should be very soft and easily pierced by the tip of a knife.
5Drain and allow to cool slightly.
6Mix the celery in the bowl with the metal blade for a few minutes.
7When it is reduced to a purée, add the cream.
8While the machine is still running, gradually add the oil via the feed tube. Salt to taste.
9Gently reheat the purée for 5 minutes.
Chef’s tip

You can make similar purées with other vegetables, such as carrots and zucchinis.
