XO Sauce “Four Delights” rice

120 g of petits pois
120 g black fungus mushroom (soaked in warm water before chopping finely with food processor)
120 g lettuce (finely chopped with food processor)
120 g carrot (finely chopped with food processor)
50 g rice (cooked and kept warm)
1 spring onion
10 g ginger (diced)
0.5 tbsp salt
70 g XO sauce
35 g oil

RECIPE STEPS
1Using the stainless-steel bowl, attach the dough hook before adding the oil in, set to stir fry programme / 2 minutes / 0 / 100°C to heat the oil.
2Add in spring onions, ginger, peas, lettuce, black fungus mushroom, and carrots. Set to stir fry programme / 3 minutes / 3 / 100°C.
3Add the XO sauce.
Set to stir fry / 7 minutes / 3 / 100°C.
At the five-minute mark, add in the salt.
