Serves 40 cookies :
250 g plain flour 
60 g Demerara sugar
100 g chocolate chips 
1 level tbsp baking powder
125 g softened butter
60 g caster sugar 
2 eggs 
1 ½ tsp of salt 
1Preheat your oven to 220 °C (gas mark 7).
2Put the Demerara sugar, salt, caster sugar, diced butter and eggs in the bowl with the dough blade. Run for 30 seconds. 
3Add the flour, baking powder and chocolate chips and process for a further 20 seconds.
4Using a tablespoon, place small heaps of this mixture on a baking tin lined with baking parchment. Leave plenty of space between each one, as they will spread during cooking.
5Bake for 8-10 minutes.
6Allow to cool before eating.
Chef’s tip

these cookies are even tastier if you add a few salted peanuts
